Ingredients

500g GFIG Bakers Flour
2tsp Baking Powder
1 cup Grated Cheese (Cheddar)
Pinch of Cayenne Pepper
Pinch of Salt
200g Cold Butter, Grated
6 slices of Meadow Fresh Swiss Cheese, Chopped
2 cups Meadow Fresh Buttermilk
Extra Meadow Fresh Swiss Cheese, for Topping

Method

1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

2. In a large mixing bowl, sift together the flour, baking powder, cayenne pepper, and salt.

3. Add the grated cold butter and rub it into the dry ingredients using your fingertips until the mixture resembles coarse crumbs.

4. Stir in the grated cheese and chopped Swiss cheese slices.
Pour in the buttermilk gradually, mixing gently with a wooden spoon or spatula until a soft dough forms. Do not overmix.

5. Turn the dough out onto a lightly floured surface. Pat it out to about 2–3 cm thick and cut into rounds or squares using a cutter or knife.

6. Place the scones on the prepared tray. Top each with a piece of Swiss cheese for a golden, cheesy crust.

7. Bake for 20 minutes, or until the scones are golden brown and cooked through.

8. Let cool slightly on a wire rack. Serve warm with butter or on their own.
