Pesto Burrata Sandwich
Creamy burrata, zesty pesto, and hearty Vogel's — your new favorite sandwich, made simple

Ingredients
Sandwich
Burrata (1 ball per sandwich)
Prosciutto (2-3 slices)
Tomato Slices
Mixed Greens (Mesclun or Arugula)
Balsamic Vinegar (a drizzle)
Grated Parmesan (optional garnish)
Pesto
1 bunch Fresh Basil (washed and dried)
1 cup Toasted Sunflower Seeds
1 cup Toasted Pumpkin Seeds
3 Cloves of Garlic
150g Grated Parmesan Cheese
2 cups Extra Virgin Olive Oil
Salt and Pepper (to taste)
Method
Make the Homemade Pesto
- Prep ingredients: Toast sunflower and pumpkin seeds if not already done
- Blend: In a food processor, combine basil, toasted seeds, garlic, and parmesan
- Add oil: While blending, slowly pour in the olive oil until a smooth consistency is reached
- Seas with salt and pepper to taste
- Set aside: transfer to a jar or bowl and refrigerate until ready to use
Assemble the Sandwich
- Generously spread your homemade pesto on both slices of Vogel sandwich bread
- Tear the burrata and place it on the toast, layer on prosciutto and tomato slices. Add a pinch of sale and pepper over the tomatoes
- Add your choice of greens and drizzle some balsamic glaze
- Wrap it up in parchment paper before cutting in half and dig in!
