Can you tell us a bit about yourself and your coffee journey?
I started working 11 years ago in a coffee shop, which lead on to a restaurant etc. I started my first cafe in 2015 where I was for 4 years. When I moved to a bigger cafe, I worked at Coffee Tech with Alan and King. They are great people to work with and know so much about virtually anything to do with coffee. I started my specialty coffee journey about 3 years ago. It was when Hanna joined them, I got to know her and watched her win the title again. It was amazing.
I’m working pretty much every day and my passion other than coffee is CrossFit. I have tried to balance my life. Also I’m a dog person, I have a corgi.
What motivated you to enter the Barista Champs this year, is this your first time?
I got first motivated by Nick Clark in 2013. That was the first time to I got to know of the World Barista Champs and this community. So, I have been an avid follower since then. Of course, Hanna motivated me to compete. To begin with 2023 is totally 10 years since I have seen this competition on social media.
How long have you worked at Mavis and Co for?
We have owned this Cafe since early 2020, then our second one from 2021.
What makes the coffee stand out at Mavis and Co?
Consistently, we make sure everyone knows and serves to the same standard in our cafe.
How do you drink your coffee?
Funny, as much as a coffee lover, I can’t even finish 1 cup of coffee per day. When get into the cafe I starts planning, and the days are busy with staff, suppliers etc. I usually get halfway through my coffee then find I’m distracted by something else.
We know you are all about the coffee, but do you have a food offering at Mavis and Co?
Yes. We focus on mainly handmade food in our cafes. everything is made on site on the day. Also, we have a menu trying to offer 14 dishes.
