Pesto Burrata Sandwich

Creamy burrata, zesty pesto, and hearty Vogel's — your new favorite sandwich, made simple

Prep time: 10 minutes

 

Ingredients

Vogel's Original Mixed Grain Toast (2 slices per sandwich)
Burrata (1 ball per sandwich)
Prosciutto (2-3 slices)
Tomato Slices
Mixed Greens (Mesclun or Arugula)
Balsamic Vinegar (a drizzle)
Grated Parmesan (optional garnish)
1 bunch Fresh Basil (washed and dried)
1 cup Toasted Sunflower Seeds
1 cup Toasted Pumpkin Seeds
3 Cloves of Garlic
150g Grated Parmesan Cheese (Pesto)
2 cups Extra Virgin Olive Oil
Salt and Pepper (to taste)

Method

Make the Homemade Pesto

  1. Prep ingredients: Toast sunflower and pumpkin seeds if not already done
  2. Blend: In a food processor, combine basil, toasted seeds, garlic, and parmesan
  3. Add oil: While blending, slowly pour in the olive oil until a smooth consistency is reached
  4. Seas with salt and pepper to taste
  5. Set aside: transfer to a jar or bowl and refrigerate until ready to use

 

Assemble the Sandwich

  1. Generously spread your homemade pesto on both slices of Vogel sandwich bread
  2. Tear the burrata and place it on the toast, layer on prosciutto and tomato slices. Add a pinch of sale and pepper over the tomatoes
  3. Add your choice of greens and drizzle some balsamic glaze
  4. Wrap it up in parchment paper before cutting in half and dig in!
