Macaroni Cheese Bites

A crowd favourite and a great way to reduce food waste within your establishment.

Cook time: 20 minutes

Tip: Make sure you use freshly grated cheese (pre-shredded cheese can make the sauce grainy)

Ingredients

125g Hellers Streaky Bacon
133g Meadow Fresh Colby Cheese, Grated
100g Frozen Corn Kernels
75g Edmonds Standard Grade Flour
2 Eggs
2 tsp Water
140g Panko Breadcrumbs
Simply Pure Canola Oil (to fry)
Tomato Relish, To Serve (Optional)

Method

  1. Finely dice bacon. Pan fry until golden and crispy
  2. Add bacon, cheese and corn to cooled macaroni cheese mixture and stir to combine
  3. Line an 18cm x 28cm slice pan with cling film. Press macaroni cheese into the pan and cover the top with more cling film. Refrigerate for at least 5 hours, until firm
  4. Remove macaroni cheese onto a board and slice into 24 pieces. Roll into balls or leave as squares
  5. Place flour in a shallow dish and season generously with salt and pepper. Whisk eggs and water together in a small bowl. Add breadcrumbs to a separate larger bowl
  6. Dip macaroni cheese pieces into flour to coat, then egg, then breadcrumbs. Freeze for 15 minutes
  7. Heat oil in deep fryer to 180ºC. Fry macaroni cheese bites for 3-4 minutes, until golden brown. Season with a little sea salt and serve with tomato relish (optional)
