Grilled Chicken Tikka Masala with Mango Chutney

Colourful, aromatic and flavoursome, this Chicken Tikka Masala has all of the elements required to spice up your menu.

Ingredients

1kg Boneless Chicken Thigh
16g Ground Cumin
16g Ground Coriander
24g Garam Masala
16g Ground Fennel
20g Kashmiri Chili Powder
100ml Yoghurt
8g Tandoori Paste
4g Tandoori Powder
18g Fenugreek Seeds
100g Fortune Biryani Special Basmati Rice

Method

1. Cook your Fortune Biryani Special Basmati Rice according to the instructions found on the bag.


2. Add the cumin, coriander, garam masala, fennel, kashmiri chili, tandoori paste and tandoori powder into the yoghurt and mix well.


3. Saute the fenugreek seeds until fragrant and add to the rest of the yoghurt and mix. Marinate the chicken, leaving whole.


4. Set aside for 24 hours in the fridge.


5. Grill chicken on a hot pan until cooked through and charred.
