Crispy Battered Fish & Chips

Crispy battered fish and chips, a Kiwi favourite!

Serves: 2

Cook time: 5 minutes

Ingredients

Simply Canola Oil (to fry)
250g White Fish Fillets
4 tbsp Rice Flour
⅓ Cup GFIG Hi Ratio Flour
¾ tsp Edmonds Baking Powder
¼ tsp Salt
½ cup Cold Soda Water
French Fries, Lemon Wedges and Tartare Sauce (To Serve)

Method

1. Heat oil in deep fryer to 180ºC


2. Place 2 tablespoons rice flour on a plate and season with a little salt and pepper. Dust
fish with flour


3. In a medium bowl, whisk remaining 2 tablespoons rice flour with hi ratio flour, baking
powder and salt. Add soda water and whisk until just combined. The batter should be
fairly thin (just enough to coat the back of a spoon)


4. Dip fish into the batter, quickly let any excess drip off, then lower into the oil. Fry for
3-4 minutes, flipping halfway, until golden brown. Place on a paper towel-lined rack to
drain


5. Serve with fries, lemon wedges and tartare sauce
