Ube Iced Latte with Salted Vanilla Cold Foam

A smooth, nutty ube latte topped with light salted vanilla foam for a rich, satisfying flavour in every sip

Prep time: 5 minutes

Ingredients

20g Ube Jam
2g Ube Extract
40g Hot Water
50g ADC Soy Milk
10g Vanilla Syrup
3g Icing Sugar
Pinch of Salt

Method

Ube paste

  1. Mix ube jam, ube extract and hot water together until smooth and well combined
  2. Set aside to cool

Cold foam

  1. Whip or froth soy milk, vanilla syrup, icing sugar and salt until thick, creamy and foamy

To assemble

  1. Add ice to a glass
  2. Spoon in your ube paste at the bottom, add your milk and stir well
  3. Finish with a generous layer of your salted vanilla cold foam
  4. Give it a gentle swirl, and top with pretty edible flowers
