Iced Milk Tea Boba

Ingredients

Brown Sugar Syrup (5 servings)
1/2 cup Brown Sugar (100g)
1/2 cup Water (125ml)
Tea (1 serving)
1 Black Tea Bag
1/2 cup Boiling Water (125ml)
1/2 cup Meadow Fresh Original Milk (125ml)
Pearls (1 serving)
1 L water
1/4 cup Brown Tapioca Pearls (45g)

Method

1. Syrup
Stir sugar and water together in a small saucepan. Bring to a boil to dissolve the sugar, then remove from heat. Allow to cool, then refrigerate until required.

2. Tea
Steep tea bag in boiling water for 10 minutes. Remove tea bag and refrigerate until required.

3. Pearls
Bring water to the boil in a medium saucepan. Add tapioca pearls, stir, then cook for 2 minutes on high with the lid on.

4. Reduce heat to medium and cook for a further 18-20 minutes (leave the lid on; stir occasionally), until pearls are soft but chewy.

5. Remove from heat and leave to sit, covered, for 5 minutes. Drain well and rinse under cold water.

6. Stir together tea and 2 tablespoons brown sugar syrup.

7. Place pearls in a serving cup. Half fill with ice. Stir in tea mixture and top with milk.

 

TIPS

  • Most of the components of this drink can be made in advance. Scale up the recipe for the number of drinks you wish to prepare.
  • When cooking the pearls, you will only need to increase the water quantity slightly as you scale up the recipe.
  • Cooked tapioca pearls can be refrigerated in an airtight container for up to 3 days - add some brown sugar syrup to prevent them clumping together. Drain and rinse under cold water before using.
  • Sugar syrup can be stored in an airtight container in the fridge for several days.
  • Tea can be steeped and then refrigerated until required.
